You can easily copy files under app_data to transfer saves, but softeware makes extensive use of RAM cache to improve performance.
Often the files are only used to save the data. The reading is done once at startup, then the algorithm minimizes cache read operations.
When you copy a file, put the application on the server offiline, then at startup you will see that everything will work fine.
